Nature’s Glitter: Snow or Champagne?

Which shimmers brighter? A blanket of freshly fallen snow, catching the sunlight and sparkling like a million diamonds? Or the effervescent bubbles of champagne, dancing and catching the light in a crystal flute? Both offer a unique kind of beauty, one born of nature’s artistry and the other of human ingenuity. Which do you find more captivating? Champagne Goulin-Roualet is a relatively young Champagne house, founded in 1990 by Jean-Luc Goulin and Jean-Pierre Roualet. However, the families behind the house have a long history of winemaking in the Champagne region, dating back several generations. The house is known for its commitment to producing high-quality Champagnes that reflect the terroir of the region. They source grapes from vineyards in the Premier Cru villages of Sacy, Écueil, Ville-Dommange, and Villers-aux-Nœuds (Mont Benoît). The house produces a range of Champagnes, including Brut, Blanc de Blancs, and Rosé, all of which are well-regarded for their elegance and complexity. The winery’s commitment to quality is evident in their use of traditional winemaking techniques and their focus on sustainable viticulture. They use a blend of Pinot Noir, Chardonnay, and Pinot Meunier grapes to create their Champagnes. The grapes are hand-harvested and then pressed slowly to extract the juice. The juice is then fermented in stainless steel tanks before being aged in oak barrels. Champagne Goulin-Roualet Origine is from the plot Le Mont-Benoit” to Villers-Aux-Noeuds Premier cru – Sacy, Montagne de Reims.  Made from 60 year old vines of 100% Meunier, grapes from the 2018 harvest only disgorgement in February 2023 with a dosage for this Brut Nature 2.7g/l 1,582 bottles produced Sparkles in the glass amber reflections reminiscent of a winter sky at dawn. The bubbles rise steadily, like a gentle snowfall, creating a delicate mousse. Swirl to a gamut of aromas – from the blood orange and delectable orchard fruit of crisp pear & bruised apple, to the bright wild strawberries, raspberry and cranberry mingled with toffee-infused cream and baked brioche, pie crust notes are warm and inviting . A subtle mineral undertone, like a hint of snow-covered earth, adds a touch of intrigue. The bouquet screams happy days. This Champagne is a winter delight! It’s style is a treat – bone dry, refreshing and invigorating, with a lively acidity that mimics the crisp air of a winter morning. Flavors mimic the nose creamy baked apple and red berries dance across the palate, accompanied by a subtle buttery brioche note that is oh so soul warming. Finishes with a lingering, slightly salty almond cherry note. The result is a bubbly that is both serious and playful, just a sheer delight. A celebration of winter’s beauty, a reminder of the warmth and joy that can be found even in the coldest of seasons. Paired with my classic roast chicken and all of the fixings to warm the soul alongside this beauty.

Bubbly Bliss Bar, a hidden champagne bar gem in Paris’s 6th arrondissement, #womenowned Marina and Daila, offers a unique experience for champagne lovers. Their thoughtfully curated selection of champagnes caters to every bubbly taste. The friendly and attentive staff makes you feel right at home. For our experience, @joannastanojevic chose a treat from @aurorecasanovachampagne , a woman in wine I had the pleasure of meeting at Printemps a few years ago. This ex-ballerina’s “Malo” Champagne “Mesnil sur Oger” Grand Cru Extra Brut is a regal, oak-aged, certified organic, and biodynamic champagne. This thrilling multiple vintage (2017/19/21) 100% Chardonnay blend is aged sur lie in 228 and 400L barrels for a year, with only 2,071 bottles produced. It’s truly sommsensational! To conclude our bubbly bliss experience, I asked @clementcabaret to introduce my friends to the uniquely decadent @champagne_mousse Rooftafia from one of my favorite winemakers. It goes without saying, it ended on a captivating note. A heartfelt thank you to everyone for making our evening unforgettable. A Prism of Multifaceted Meaning: Family, Terroir, and Legacy of Chateau Gassier

In celebration of this week’s #WineWednesday, I want to highlight a remarkable gathering I attended that marked the launch of a unique hexagonal bottle by the multigenerational family at Château Gassier. The 2025 launch of Château Gassier’s hexagonal bottle establishes a singular visual identity, a living tribute to the family’s lineage. Its six facets symbolize the six generations of winemakers who have shaped their artisanal legacy. Inspired by the Montagne Sainte-Victoire, the bottle’s sculpted ridges reflect its origin and exemplify French craftsmanship. Every element, including the delicately embossed “1982” marking the founding year, reinforces the Maison’s enduring heritage. The geometry of the bottle is meant to symbolize the terroir and craftsmanship of the winery, reflecting a modern yet classic approach to wine presentation. Additionally, the design aids in optimizing the wine’s exposure to light, potentially improving preservation. Perched at the foot of the stunning Sainte-Victoire mountain in Provence, Château Gassier is more than just a winery; it embodies a legacy that dates back to 1421. This 40 hectare family-owned estate is dedicated to crafting exceptional wines. Alongside George Gassier, estate manager Olivier Souvelain and oenologist Léa Rouyet, utilize organic farming methods to produce elegant rosé wines from their 26 micro parcels that highlight their elegant and unique AOC terroir. Olivier, who is very passionate about making rosé said “ we wake up and we go to sleep thinking about the color of rosé.” Château Gassier is a true testament to the enduring spirit of Provence, merging passion, tradition, and deep respect for the land to create wines of remarkable character. What Sets Château Gassier Apart? A Legacy of Excellence: The Gassier family’s commitment to winemaking spans five generations, ensuring a tradition of quality and innovation. Terroir of Distinction: Their vineyards thrive in a unique microclimate provided by the Sainte-Victoire appellation, featuring limestone-clay soils that infuse their wines with pure energy. Organic Philosophy: Château Gassier adheres to organic farming practices, nurturing the land to yield the purest expression of terroir in every bottle. Artisanal Approach: A focus on creativity and craftsmanship leads to the production of distinctive and vibrant rosé wines that encapsulate the spirit of Provence. The Sainte-Victoire AOC, located in southeastern Provence, experiences a climate with subtle continental influences, shielded from southern maritime influences by the Monts Auréliens and the Sainte-Baume Mountain Range. It encompasses the hillsides of the upper Arc Valley, where the rocky ridge of Sainte-Victoire reinforces this continental microclimate and diminishes the impact of the Mistral wind. The location plays a pivotal role in shaping the region’s winemaking style. Known primarily for its rosé wines, this area produces exceptional blends from varietals like Grenache, Syrah, Cinsault, and Rolle (Vermentino). These wines embody the essence of Provence, boasting refreshing profiles, aromatic complexity, and elegant balance. At an intimate lunch at Michelin star Gaya by Pierre Gagnaire in Paris, I had the pleasure of experiencing the launch of the new bottle alongside expertly paired dishes. Olivier Souvelain guided us through the development and makings of the uniquely shaped bottle and the exquisite terroir of Sainte-Victoire, while the menu, curated by renowned chef Pierre Gagnaire, showcased seasonal ingredients reflecting his commitment to quality. The elegant ambiance of Gaya is the perfect backdrop for this innovative French culinary experience. Menu: Gassier Rosé 2024 Côtes de Provence: This wine features a pale pink color with vibrant aromas of ripe strawberries, white peach, and citrus zest. Its crisp palate, lively acidity, and silky finish. Le Pas du Moine – 350 Blanc 2023 Côtes de Provence Sainte-Victoire: A wine they first made in 2021, very small production of 5500 bottles. A white mostly made from Rolle with a touch of Vermentino. A beautiful pale yellow with enticing aromas of citrus blossom and ripe pear, this wine balances bright acidity with lush flavors, making it a delightful companion for Carpaccio of Saint-Jacques with fleur de sel, ice cream cottage cheese, grapefruit juice with chervil, sprouts of sea herbs. Château Gassier 946 Rosé 2022: This stunning small production parcel rosé is a brilliant coral pink aged for 18 months in oak. They wanted to evoke micro-oxygenation in this gastronomic wine to create complexity and layers. It showcases expressive notes of honey, dried fruits -peach, apricot and mango , toasted vanilla, clove and racy minerals, ripe strawberries and fresh watermelon, balanced by crisp acidity and a clean, lingering finish. A complex wine paired beautifully with Bigorre cod, whole roast & thick sliced, laid on a Roscoff onion fondue with sweet curry, potatoes rattes with Nantais butter. Le Pas du Moine – 350 Rosé 2024: This exquisite rosé presents vibrant notes of ripe strawberries and pink grapefruit, delivering a lively, refreshing sip that captures the Provençal terroir. To conclude this delightful meal, a passion fruit macaroon with roasted pineapple was served, perfectly complemented by the exquisite Le Pas du Moine – 350 Rosé. Learning about the inspiring journey of Château Gassier from Olivier and the winemaking insights shared by the talented Léa Rouyet made this experience all the more special. Embark on a voyage of vinous discovery with Gérard Bertrand, a visionary whose artistry elevates blending to a transcendent form. He invites you into his world, where terroir, grape, and time intertwine to redefine the very essence of excellence. I recently had the distinct honor of joining Mr. Bertrand for an intimate launch of his new book, Multidimensional Wine, a truly special occasion made even more exquisite by pairing his signature wines with the culinary masterpieces of Le Bernardin Michelin Three Star restaurant in New York City. Gérard Bertrand’s journey is a testament to the transformative power of passion and dedication within the Languedoc-Roussillon wine region. From his formative years working alongside his father at Château de Villemajou, Bertrand absorbed the nuances of winemaking, a foundation that propelled him to take the helm of the family estate in 1987 and leave his successful rugby career behind.. His vision extended beyond familial boundaries, leading to the establishment of the Gérard Bertrand wine company in 1992, catalyzing a period of remarkable expansion. Driven by a deep respect for the land, Bertrand became a fervent proponent of biodynamic viticulture, a commitment that has culminated in his operations achieving the distinction of the world’s largest certified biodynamic vineyard in 2024. I expressed my sincere admiration for his pivotal role in establishing Languedoc as a force to be reckoned with—a region synonymous with biodynamic practices and age-worthy, high-quality wines. Sylvain Pataille: Elevating Marsannay’s Terroir

Celebrating another year with a special wine from Sylvain Pataille. Sylvain Pataille: Elevating Marsannay’s Terroir Through Craftsmanship and Chardonnay Rosé Sylvain Pataille has gained significant popularity and appeal in the wine world, primarily due to his focus on terroir, traditional winemaking techniques, and an unwavering commitment to quality. By highlighting the unique characteristics of Burgundy’s terroir, he connects consumers to the essence of the land. Pataille employs minimal intervention methods, including wild yeast fermentation, which allows the grapes to express their true nature. His meticulous vineyard management and craftsmanship result in a diverse range of wines—ranging from elegant Chardonnays to vibrant Pinot Noirs—appealing to various preferences. Furthermore, positive reviews from critics have enhanced his reputation, and he represents a new generation of Burgundian winemakers who balance classic practices with modern sensibilities. Chardonnay Rosé is a genetic mutation of the Chardonnay grape that is specific to the village of Marsannay. Sylvain Pataille first identified this mutation in 2002 when he acquired his Blangeys parcel and discovered some surprisingly pink grapes during the harvest. From 2002 to 2005, his Marsannay Blanc was made entirely from 100% Chardonnay Rosé grapes from Blangeys, but he later began blending in Chardonnay from other parcels to complete the cuvée. Not satisfied with mixing this unique grape variety with traditional Chardonnay, Sylvain continued his research. In 2009, he used his vines from Les Blangeys to propagate the variety, planting at a high density of 20,000 vines per hectare, with additional plantings in 2013 and 2014. The 2014 vintage marks the inaugural release of this cuvée. As Sylvain’s young massal selection vines mature for wine production, there is hope for an increase in production beyond the current two barrels. The wine is produced using certified organic and biodynamic methods, with indigenous yeast for alcoholic fermentation. It is aged for 15 months in 3 to 4-year-old barrels, with minimal sulfur added only at bottling. He only makes two barrels which equates to 600 bottles, a very limited production. Sylvain Pataille Marsannay Chardonnay Rosé 2021 In the glass, the Sylvain Pataille Marsannay Chardonnay Rosé 2021 displays a delicate, luminous hue reminiscent of a soft sunset. Its pale salmon color is punctuated with glimmers of copper, inviting one to explore its depths. The bouquet is both enchanting and complex, revealing the sophistication of the Chardonnay grape. Opening with bright notes of ripe strawberry and wild raspberries, the aroma is layered with hints of fresh citrus—particularly zesty lemon zest—and floral undertones of peony and delicate rose petals. As it breathes, subtle nuances of crushed herbs and a whisper of minerality emerge, evoking the terroir of Marsannay that is both vibrant and evolving. On the palate, this white embodies elegance and vivacity. The initial sip is a burst of fresh red berries, seamlessly transitioning into a rich core of sun-kissed peaches and juicy apricots. A crisp acidity balances the wine beautifully, providing a refreshing lift that keeps the palate engaged. A brilliant pale lemon color hints at its vibrancy. The nose bursts with citrus notes of lemon and grapefruit, entwined with green apple and white peach, elevated by floral hints and a whisper of thyme. The first sip?
