The Aubry family dates back to 1790 in Petit Montagne de Reims where their 16.5 hectares are divided into 60 parcels, many of which are planted on their original rootstocks (not affected by phylloxera). Twin brothers Pierre and Philippe, enologist and biologist respectively, focus on low yield and cœur de cuvée for their vintage champagnes. Their focus is on the less popular champagne grapes of Petit Meslier, Arbanne and Pinot Blanc as well as vinified in small old barriques. This particular cuvée is a blend of 40% Chardonnay, 25% Arbanne,
25% Petit Meslier, 10% Pinot Blanc. A Brut Nature (zero dosage) and aged for 48+ months sur lie and disgorged February 2021

The nervy bubbles are explosive, livening the pale gold color, The aromas are nervy with tons of white blossom accents, pastry, ginger and bergamot. A brash and breezy Blanc de blancs with very linear in it’s direction – ripe apple, pear and quince, savory minerals, acacia, honeysuckle, honey and citrus are the sensation is so grande and long in its persistance.

We paired this champagne with a cheese from #Piemonte called La Tur – a dense, creamy blend of pasteurized cow, goat and sheep milk. Absolutely stunning.
